Roasted Root Vegetables

Ingredients

  • 2 cups chopped parsnips
  • 2 cups chopped Klondike Rose® Potatoes
  • 2 cups whole brussels sprouts
  • 2 cups chopped carrots
  • 2 cups chopped turnips
  • 1 cup chopped onions
  • ½ C. olive oil
  • 4 cloves garlic
  • 1 Tbsp. fresh rosemary
  • 1 Tbsp. fresh sage
  • 1 Tbsp. fresh thyme
  • Sea salt
  • Fresh ground black pepper

Preparation Steps

  1. Preheat oven to 400°F.
  2. Put all chopped vegetables into a large baking dish. Toss with olive oil. Sprinkle with seasonings.
  3. Bake in oven for 45 minutes, stirring occasionally until vegetables are tender and golden brown.
