Ingredients
- 2 ½ lbs. Klondike Goldust® potatoes cut into 1 inch cubes
- ½ lb. bacon
- 1 can (14.5oz) diced tomatoes with chilies, drained
- 3 C. shredded cheese
- 4 green onions, chopped
- 1/3 C. chopped green bell pepper
- 1/3 C. chopped red bell pepper
- 1 ½ C. mayonnaise
- 2 Tbsp. fresh squeezed lime juice
- 1 tsp. seasoned salt
- ¼ tsp. fresh ground pepper
- 1 ½ tsp. chili powder
- 2 tbsp. fresh cilantro, chopped
Preparation Steps
- Place potatoes in a large pot and cover with cold water. Bring to a boil and cook 10-15 minutes or until tender. Drain
- Sauté bacon over medium heat until cooked and crispy. Remove bacon and drain on paper towel. Add onions, and green and red pepper to bacon drippings, cook until nice and soft.
- In a large bowl, place potatoes, tomatoes, cheese, onions, and peppers.
- In a smaller bowl, whisk mayonnaise, lime juice, seasoned salt, pepper, and chili powder. Add to potatoes and stir to coat. Pour into a greased 9×13 pan.
- Chop bacon, sprinkle over top.
- Bake uncovered at 350°F for 30 minutes or until casserole is heated. Sprinkle with cilantro. Let stand 5 minutes before serving.
